Butternut Squash Casserole

Good for the holidays

Ingredients:

4 Qts of finely chopped fresh butternut squash (peeled and seeded)
½ lb of whole butter
2 tablespoons of olive oil
1 Spanish onion small diced
1 teaspoon of garlic minced
2 cups of sour cream
4 cups of crushed saltine crackers
2 tablespoons of chopped fresh parsley
1 cup of chicken stock
1 teaspoon of white pepper
1 teaspoon of fresh thyme
2 tablespoons of salt
½ teaspoon of cayenne pepper
¼ cup of fresh breadcrumb

Preparation:

In a large skillet or braising pan place olive oil and butter on medium heat. Then add butternut squash, garlic and onions. Continue to sauté until onions and butternut start to soften. (About 15 minutes) Then add chicken stock, herbs, salt and pepper and mix thoroughly. Next add crushed crackers and continue to cook for another 10 minutes. Remove from heat and fold in sour cream. When ready to serve place into dish and top with breadcrumbs and a little butter and brown the top.
